Pumpkin Pie :)

I have had SO many people asking me about this recipe, so I decided to post it again in case you are unable to find it :)

I was trying something completely new this year, and decided to have a trial run....just in case! Last night I made my first Gluten Free/Sugar Free/Dairy Free Pumpkin Pie...and let me tell ya....AMAZING!!!! I was a little worried, because I got the recipe from Karina's Kitchen and she doesn't make hers sugar free. I always use Agave Nectar as my Sugar substitute and I was worried this might keep it from solidifying. However, I did my research and just added a 1/2 tablespoon extra of Tapioca flour and it did the job! I am so excited to be able to offer my guests a healthy and delicious dessert on Thanksgiving. I have included the recipe below in case you are interested!





Vegan Pumpkin Pie

Preheat the oven to 350 degrees F. Lightly grease a 9-inch glass pie plate.

In a food processor bowl add:

1 14 or 15-oz can pumpkin
1 1/2 cups plain hemp milk (yes, it must be hemp or coconut..not soy or rice)
2 teaspoons bourbon vanilla
3/4 cup Agave Nectar
1/2 cup buckwheat flour
2 1/2 tablespoons tapioca starch/flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 teaspoon cinnamon or pie spice
1/2 teaspoon nutmeg

Cover and process until smooth and creamy. Stop and scrape the sides of the bowl, if necessary to incorporate all of the dry ingredients.

Pour into the prepared pie plate and smooth evenly. Bake in the center of a preheated oven for about an hour until done. The pie should be firm- but still give a little when lightly touched. The center should not be wet. It will fall a bit as it cools.

Cool the pie on a wire rack completely. Cover and chill in the refrigerator until serving.

Makes 8 slices.

Exciting News!!!! Susie Linquist Photography is expanding!!!

Well, it's about time we come out with the truth :) Yes, the rumors are true! Susie Linquist Photography will be opening another location in Wilmington, NC this coming March. The good news is, this means we are now photographing fabulous people from Coast to Coast and Beyond! Amy and Patty will continue to work in San Diego, and I will mostly be covering weddings on the East Coast. I will be flying back to San Diego as often as possible to work, as well. As of now in 2010 we are booked in San Diego, Wilmington, NYC, Virginia, Ohio and Boston! We are very excited about our expansion, and we hope you are too! So, please tell your friends, family, neighbors, facebook friends, twitter followers, etc etc, that Wherever you are, we will come to you to photograph your wedding, engagement, boudoir session, portrait session, etc :)

Now for the big question... Why?! Well, Jeremy and I moved to San Diego 5.5 years ago for him to attend Pacific College of Oriental Medicine. He has since graduated and is practicing acupuncture locally. When I moved here, I had no idea what I was going to do, who I was going to meet, and to be honest, I was quite terrified. I had absolutely no idea what life was going to be like, but something inside told me I was supposed to come here, risk everything and open my studio. So I did. That is often how life is for me. I am guided to do something so I do it, and usually the results are surprisingly fantastic. I wake up every morning and I am in complete AWE of my life. I have created the most unbelievable lifestyle for myself out here, that sometimes I feel like I live in some magical world, just outside of reality. I have made, and continue to make such amazing friendships. Because of my job, I make my own schedule which allows me to go to the beach on a Tuesday, sleep in till 9 or hey, even 10 if I feel like it :) Simply put, I am Blessed, and I know it.

About three months ago, my sister and niece came out to visit and we had the most amazing time together. The time came for them to leave, and it was just too hard saying goodbye.... Again! Jeremy and I looked at each other, and for the first time in almost 6 years, we knew the winds of change had blown our way. We decided almost immediately to relocate to Wilmington. Not only is my family there, but Jeremy's family is as well. It's funny how perspective changes as we get older. The tall palm trees, blue skies and perfect climate of Southern California are no longer what matters most. Being with family, not just on the holidays, but on an ordinary Wednesday, is what matters most. Listening to what I am guided to do has always led me in the right direction, so I am sure this time will be no different.

I want to say that Living in San Diego for the last 5.5 years has been a dream come true, literally! I will say that I have the best friends, and work with The Best in the industry. Encinitas will always have a special place in my heart, and so will all the people who have enriched my life while being here.

Kiet + Brian. Engagement Session in Balboa Park

Kiet and Brian are getting married in a few weeks and I am really looking forward to their wedding! There will be a traditional Chinese Tea Ceremony to start off the day. Stay Tuned for that in a few weeks :)

Kiet is currently living in Phoenix so I hadn't seen her since our 1st meeting last June! It was so great to catch up with her and Brian and learn more about them as a couple :) They chose Balboa Park as the location, and it was perfect for them.
